Every course of this exclusive four-course dinner is infused with ancient native ingredients and constructed to respect, highlight, and harmonise their qualities. Dishes are perfectly paired with wines from renowned Australian winemaker, Penfolds.
Canapes might include Quaker’s Hill Confit Duck breast with Riverlands Emu Pate on Lavash crisps, apple cider pickled red onions; an entree, Wattle Seed Dusted Dorper Lamb Loin with Pepper berry aioli, grilled kipfler potatoes and wilted arugula; while a main course could be pan Glacier 51 Toothfish with polenta, sea grapes, edamame, beach succulents, sour butternut puree and vermouth cream. And for desert; honey mousse and Kakadu Plum compote, matcha sponge and honey tuille.
